This coffee is going to take a lot of people by surprise in the best way! Indonesian coffees have a reputation for dry, woody, cedary undertones.

That is not the case here!

Super sweet and very fruity, this coffee reminds me of black forest cake with dark, ripe cherries. Tropical notes like kiwi and dragonfruit provide the acidity. My wine drinkers will pick up on ruby port and madeira notes on the finish.

Hamdan and Hendra are the father-son duo behind Pegasing Washing Station. Pegasing is a wet mill that processes coffee from roughly 70 small farmers in Pegasing, Indonesia.

Hamdan moved his family to Pegasing in 2006 and started growing coffee straightaway. Four years later, his son came on board. Contrary to others in the area, he experiments with coffee processing methods.

Conventional wet hulled coffees are more typical. He's created "an island of avant-garde specialty coffee" in a sea of convention.

Hendra employs 8-10 different processes at the wet mill. He often decides which one to use on a particular lot based on the weather that day. For this lot, it was an anaerobic natural kind of day! Upon arriving at the wet mill, the whole cherries go through four rounds of sorting.

There are two density table sortings and two by hand. This ensures that only the fruit of highest quality remain. Then the whole cherries ferment in sealed plastic bags for 48 hours. Finally, they dry in a temperature controlled tent for 20-25 days.
